By deliberately limiting our harvest yields to less than 1 ton per acre for our Cabernet Sauvignon … 1.5 tons per acre for our Chardonnay in Lilly’s Vineyard … and 2 tons per acre for our Malvasia in Amanda’s Vineyard … we consistently maintain some of the lowest yields in Slovenian Istria. This strict discipline ensures that each vine concentrates its energy into small, perfectly ripened clusters bursting with more flavor, sugar, and phenolic richness.
Only when the grapes reach this ideal phenological maturity, they are then gently collected in the cool morning hours to preserve the integrity of each cluster and maintain their perfect structure … This sets the foundation for our wines: bold, complex, and profoundly expressive.
